HOMEMADE Kenyan Bhajias are an easy, quick snack to make when you are new in the Diaspora and still getting used to the rich local cheeseburgers, cheesesteaks, hamburgers, glazed doughnuts and cheese fries. Bhajias can be a great substitute for potato fries, pretzels, potato chips, cheese twists, popcorn and peanuts. They are also economical and can save you some dollars in your account for a rainy day.
All you need from a supermarket or Corner store are: all-purpose flour, milk, eggs, sugar, and vegetable oil.
Depending on the population in your house, mix the flour, sugar, eggs and milk in a bowl and stir to a semi liquid. Heat the oil in a pan to dip. Gently drop large table spoonful of the dough per Bhajiah into the hot oil and wait to brown for three minutes. Turn down the heat as the oil gets too hot to avoid burning.
Note: Milk may be substituted with water. You may be creative with this snack and add parsley, iliki (cardamon), cayenne pepper and baking powder to your dough.
