RECIPE: Sukuma Wiki Kipenzi (Collard Greens or Rape Hobson) and Kale Dish
SUKUMA WIKI and Kale are easily available in almost every supermarket, fresh grocers or corner store in the US. I bunch costs about US $1.99 (Kshs 199).
Quantity: Serving one Sukuma and one Kale mix: This dish is very popular among Africans in the Diaspora.
Wash the stalks thoroughly in flowing tap water. Roll the stalks until they fit in the palm of your hand.
Cut the Sukuma wiki and kale into round rings by slicing vertically through every roll the way you slice bread.
Peel an onion and chop the inside into squares. Slice one green paper into round rings.
Place a pan on hot stove and pour two tablespoons of oil. Add the onions and pepper to the hot oil.
When the onion browns, add the Sukuma wiki and kale and cover the pan.
After two minutes, add a pinch of salt, garlic and lemon pepper and cover the pan.
After two minutes, stir the dish for 30 seconds to one minutes, then cover the pan.
After one minute, Sukuma Wiki Kipenzi is ready to serve.
This dish is best eaten with hot ugali or bread.
